I did some looking about and found in Nexis that
_chopped meat_ is far more frequent than _chop meat_.  (I haven't been
to the supermarket yet today.)

_Chop meat_ does appear occasionally.  One article suggested that _chop
meat_ was NYC talk.

This all made me think of _chop liver_.

The dictionaries record it as _chopped liver_ (HDAS: 1954).  However, I
have found a significant number of cites for _chop liver_--albeit quite
a bit fewer than for _chopped liver_.
