Possessive s: Having it both ways

I only say the extra s when it's written that way:

Written as James', I say <James>
Written as James's, I say <Jameses>

This has nothing to do with my own personal choices when I am writing or
speaking, only my pronunciation when reading something already written.

Have I missed a rule/convention somewhere along the way?
