MATTAK & SUAASAT

   From GREENLAND TOURISM 97-98, pg. 33:

   Greenland's national dish is suaasat, a strong soup with seal meat cooked with rice and onions as a side dish.
   Mattak, a great delicacy, is whale skin with a thin layer of blubber, which is normally eaten raw, cut into small cubes.  It can be a little strong, but while you chew, a nutty flavour slowly develops.  Mattak soup and grilled mattak are a little more refined.  Whale meat itself resembles beef in appearance, and is a lovely dish when served roasted with soft onions and boiled potatoes.

KAYAK

   From another guide:

   The word "kayak" is derived from the Greenlandic word "qajaq".  In recent years, Greenlanders have shown increasing interest in kayaking.
