Well, that is solved. I was aware of the practice of making square cuts on
flank steaks or other tough meats, and that "cubed" was merely transfered
to the practice of tenderizing meat by other means. The modern cube steak
certainly looks more like it has been beaten flat than cut.
Thanks for the reference. All I have at home is the OED, which doesn't
list that meaning for "cube" as a verb.
