Query: Victory Cabbage and War Words

As a frequent contributor to columns in the Oregonian newspaper, I am
seeking the source and confirmation on several words for an article on
"war words."  A history professor friend has informed me that prior to
or during World War I, in response to the German threat, we changed the
word "sauerkraut" to "victory cabbage", frankfurters to hotdogs, and
German Shepherd dogs to Alsatians.  Any help you can give would be much
appreciated.  I have already credited a few words to the American
Dialect Society in the article and would be happy to send a copy when
it is printed.
