_Puppy Stick Wieners_
1/2 cup flour.
3 teaspoons baking powder.
1/2 teaspoon salt.
2 tablespoons sugar.
1 cup yellow corn meal.
1 egg, beaten.
1 cup milk.
2 tablespoons melted butter.

Sift together dry ingredients. Add corn meal, egg and milk. Add butter.  Bake
in buttered, hot iron corn stick pans in moderate oven at 400 degrees F.
about 30 to 40 minutes. Makes nine large or 12 small sticks. Put cooked wieners
in the middle of the stick before cooking.

3/4 lb. sweetbreads.

Cut all into small pieces (about 1/2 inch). Place all except brains in a
rather large container with plenty of water. Stew slowly for 4 or  hours.  Add
brains about an hour before done. When done add seasoning of salt and black
pepper to taste. A dash of red pepper. Thicken the gravy slightly.

4 egg yolks.
1/4 cup olive oil.
1 tablespoon lemon juice.
1 1/2 tablespoons vinegar.
1 teaspoon salt.
1 teaspoon mustard.
Cayenne.
1 cup whipping cream.
1 teaspoon sugar.
1 1/2 teaspoons horseradish, grated.

Beat the egg yolks and add the olive oil, lemon juice, vinegar, salt,
mustard, and cayenne. Cook in a double boiler, stirring constantly. When thick
chill, add the cream whipped stiff, the sugar, and grated  horseradish.
