As a child (in east Texas) in the 1950s, I knew of "saucering" coffee as a means of cooling it, but the act was always identified as "bad manners."

Maybe the easy access to ice chips make the practice obsolete.  Or the lowering of the temperature of coffee served at commercial establishments.
