OED has "ice cream cone" and "ice cream sandwich" under compounds for
"ice cream", but no "ice cream cake". Nonetheless, there are two
citations for "ice cream cake" under "ice cream" /attrib./--from 1878
and 1880, both from cookbooks.

Bluffton Weekly Chronicle, Bluffton, Indiana, for April 22, 1880, also
has a recipe for an ice cream cake.

Detroit Free Press also has an ads for most of 1880 for ice cream
cakes "for weddings and parties".

Another recipe shows up in Mansfield [Ohio] Herald, August 17, 1876.

Farm and Household. p. 6/5
> To make ice-cream cake use one and a half cupfuls of sugar, one and a half cupfuls of flour, one-half cupful of butter, one-half cupful of cornstarch, one-half cupful sweet milk, whites of six eggs, one teaspoonful of baking-powder. Flavor to suit.

I have no doubt these are not unique.
