Muhammad Ali, but also for some time, at least in sabermetric and other "advanced analytics" and sports blog (e.g. Bill Simmons's) circles to other (non-Olympic) sports, e.g. in debates on whether LeBron has eclipsed Michael Jordan as GOAT, whether Tom Brady is GOAT, etc., whether Wayne Gretzky is the super-GOAT (across all sports, not just hockey), etc.  Maybe it's time some dairy tried patenting a GOAT cheese.

Of course the homonymy is a cute benefit--causing double-takes with the non-acronymic metaphorical meaning.
