The English Oxford Living Dictionaries give “wing chun” (https://en.oxforddictionaries.com/definition/wing_chun <https://en.oxforddictionaries.com/definition/wing_chun>) as a mass noun, and Wiktionary does the same (https://en.wiktionary.org/wiki/Wing_Chun <https://en.wiktionary.org/wiki/Wing_Chun>) with capital letters.

In a 15 March article I cited a few minutes ago, the The Washington Post has this as a verb:

"She found a dating app on her boyfriend’s phone. Then she bought a samurai sword.”
by Kyle Swenson

“I was able to wing chun my way to survival,” [Alex Lovell] told the Oregonian/OregonLive in an interview this week over Facebook messenger, referring to a Chinese martial art.

But I guess if this is how you get your jollies, its a lot easier than punching people in the school cafeteria, which could result in you getting wing-chuned.

3. On 30 May 2012, desertwingchun2 also uses this verb:

When my buddies came over they were all laughing and saying "Dave fully Wing Chuned him!!!”

Not many hits, but this is probably a common enough verb in certain circles, nonce or not.
