Hi Randa,
Have you seen the recent fascinating and very exhaustive report by the
organisation Literature Across Frontiers? It's called "Literary Translation
from Arabic into English in the United Kingdom and Ireland, 1990 – 2010"
and you can download it from this site:
http://lafpublications.org/making-literature-travel/ Although it's about
publications in the UK and Ireland, in practice this includes many joint
publications with US publishers, so many US titles are given here in the
extensive bibliography.

This well-informed blog has regular reviews of Arabic lit in English:
http://arablit.wordpress.com/

Also, it might be worth getting in touch with the organisation & online
literary magazine Words Without Borders as they are about to launch a high
school and college education program on international literature in the US
