You could contact Jamal Iqtish of Islamic Relief:

Although my impression from working with him and his organization last fall
is that they are being overwhelmed and would be hard pressed to deal with a
lot of individuals volunteering.  Right now there are over 40,000 children
in Zaatari Camp who are not being educated at all. The need is huge, but
the infrastructure is not now in place to deal with individual volunteers.

There's a program here in Jordan (East Amman) called the Collateral Repair
Project, you can contact Amanda at amandajlane at gmail.com.
The program is made for Iraqi refugees, but the program is now absorbing
many Syrian refugees as well.

Greetings.

Ref your query posted in the Arabic-L List.

In view of the considerable and time-consuming complications in securing
such an overseas gig as a volunteer ESL tutor, you might otherwise consider
volunteering your services to ACCESS or similar community-assistance
organizations which serve the various Arabic-prevalent communities there in
Michigan, particularly those  clustered around Dearborn, Warren and Detroit.
