Another option might be a book like "Introduction to Applied Linguistics" (ed, Norbert Schmitt)

For education graduate students without a linguistics background, but who are interested in current issues that can be applied to education, this may be an approach which they find useful.  It has three sections (each with chapters by really good people in the field):
- Description of Language and Language Use
- Essential Areas of Enquiry in Applied Linguistics
- Language Skills and Assessment
