I normally use a wireless microphone as the input to a professional Hi8
videorecorder with stereo sound.  Quality of sound depends on the quality
of the wireless mic - which pretty well depends on how much you're willing
to pay.  Another trick is to put the sound from the mic through a graphic
equalizer en route to the videorecorder.  This enables you to boost the
critical frequencies for speech and attenuate the low and very high
frequencies.
