[Lexicog] IPA (International Phonetic Alphabet)

We certainly don't have the kind of knowledge of classical or koine
phonetics that we would if they had been so kind as to pass down
audio recordings, but a reasonable amount is known. The standard
reference is W.Sidney Allen's book "Vox Graeca", which in spite of its
Latin title is in English. Evidence comes from a variety of sources,
ranging from descriptions by ancient Greek grammarians to the way
in which Greek words are represented in other languages.

(There is a corresponding book entitled "Vox Latina" on the evidence
for classical Latin pronounciation.)
