I've been looking for similar tools on the Mac.

Praat
http://www.praat.org
This is a very powerful sound analysis program that can greatly help in
any transcription task. Its interface is somewhat peculiar for those who
may be used to other analysis programs but it literaly works wonders.
Perhaps the most amazing thing with Praat is that you can get it for free
by sending a message to the author, Paul Boersma. There's an
eGroups mailing-list for Praat users and the program is regularly updated
in response to questions posted on the list.

Listen&Type

This shareware integrates a simplistic Quicktime-based sound player in a
simple text editor. Its most convenient feature is that pressing the tab
key plays back a set portion of the file.

Transcribe!

Another shareware This one is meant for musical transcription (with an
on-screen keyboard and spectrum analyzer) but could be used to transcribe
text.

There are several other programs that could be used but most of them are
relatively expensive.
As for Unix and Windows programs they can still be used on the Mac with an
emulator (e.g. Virtual PC) or LinuxPPC.

Good luck!
