below is a summary of the suggestions I got regarding audio/transcription
software for the Macintosh:

MicNotePadLite

Alberto Riccis Sound Effects (Shareware15 $ ) to play the sound on any
textprocessor for the transcription. (no URL provided, for more info. try

The Max-Planck-Institute for Psycholinguistics at Nijmegen has facilities
tools linking transcripts and video on the MAC and a
tool linking transcripts and sounds which is written platform
independent.
