Hello to all,
- way past my bedtime here, so its not a good time to
talk about sand-cakes, but I have baked (and
consumed!) a lot of them:

200 g sugar
200 g butter (or margarine or soybean "margarine" for
the allergic)
200 g wheat flour
4 eggs

The point is to stir first sugar and butter to an airy
"fluff", then the eggs to add to this "fluff" effect
(kitchen chemistry). Then the flour. If you do not
trust this to heave on its own, you can help it with
1/2 a teaspoon baking powder.
If this is too sweet, you can add a little lemon juice
and/or grated peel (organic).
Put in a greased baking form, in the oven on about 175
C for about 1 h 15 mins. It should look like a loaf of
bread when its done.
