Very nice, and sounds familiar. However my Nana always squished
(squeezed very hard) the dough into iron cup forms with fluted sides
(like paper cup cake holders, but iron) to about1/8 to 1/4 inch (about 3
to 6 mm) thickness. The result looked like English tart (the food, not
the woman of easy virtue!!) crusts. We put either nothing in them or
perhaps heavy whipped cream. I wonder if they are just a little bit
fattening?

- way past my bedtime here, so its not a good time to
talk about sand-cakes, but I have baked (and
consumed!) a lot of them:

Lone and all, those sound really good! From whence comes the name sand cake?
Does it look like a lump of sand after you bake the fluffy mixture. Am I
missing something? Is there a different etymology to the word sand?

I'm pretty sure you're talking about Norwegian (plural) _sandkaker_ here,
which are *cookies* of sorts ("biscuits" for our non-American friends). I'm
not sure about our Lone's Danish (singular) _sandkage_ (and I hope she's
awake by now), but I was talking about *cake*. I suppose the difference is
shape here.

Ben, not to detract from Lone's possible answer, but I need to draw your
attention to my description of these baked goods, assuming that you missed
it:

"Without any liquid ingredients" except eggs.

The "kha-kha-kha" is something along the lines of a cat coughing up a hair
ball. ;-) The more polite version is a suppressed little cough.

Reinhard/Ron
