in alle uithoeken van het land voorzien overigens vooral de Chinese restaurants
in de behoefte aan Indonesisch eten. Elke Chinees heeft het op zijn menu staan.
De Chinezen zijn een succes geworden na de politionele acties/ de Indonesische
onafhankelijkheidsoorlog. De talloze jonge soldaten die terugkwamen van die
oorlog hadden geproefd van de Indische keuken en wilden meer. </span><span style="font-size: 10pt;">De Chinees sprong
snel in dat gat. </span></p>

<p style="font-family: arial,helvetica,sans-serif;" class="MsoNormal"><span style="font-size: 10pt; color: navy;" lang="NL">Ik
heb me altijd laten vertellen dat zelfs vóór de onafhankelijkheid van Indonesië,
erg veel restaurants daar werden bedreven door etnische Chinezen die daar al
generaties woonden. Ik herinner me ook dat onder de mensen die na WWII uit “Indië’
naar Nederland kwamen, veel “Chinees/Indische” families waren. (bij ons op
school zaten er twee meisjes in de parallel klasse) Maar ik durf er mijn hand
niet voor in het vuur steken dat daarvan velen Chinees/Indische restaurants
zijn begonnen.</span></p>
