Swiss enchiladas

I asked my Swiss friend (who used to work at the US Embassy in Switzerland)
whether she had heard of Swiss Enchiladas:

  Yes, I have heard of Swiss Enchiladas, but not in Switzerland, I have seen
  the name only in Mexican Restaurants.  Have I ever thought about why they
  are called Swiss? Not really.  So many things, especially foods are called
  Swiss something in this country that have little to no connection to
  Switzerland, except that they might be made of a dairy ingredient. I usually
  stay away from products which are called Swiss since they are usually not
  authentic, except for the imported Swiss cheese, which as we know is not
  really called Swiss cheese but Emmenthaler.

And so, straight from the Schweizedeutschen Mund.
