I think the very simplicity and certainty of the "which hunt," plus the
likelihood of finding plenty of "which"es in normal prose even without the
search function, make it appeal to copy editors. Like traffic cops, they have
(at least implied) quotas - if they read through a whole ms. and find nothing
to change, they must not be doing their job. So change a lot of "which"es to
"that"s and you're racking up a lit of tickets as well as saving the English
language.
