laxing of high front vowel before /g/ and in quiche

On the flipside, there's a fair amount of orthographic 'i' pronounced as
short E as in

mElk for milk (i get laughed at in Boston for this)
Ellinois for illinois
Endiana for indiana

Also, long-time Chicagoans say kEnzie for kinzie (a street just north of
the Chicago River).
