In addition to that old standby Larousse gastronomique, there are several
dictionaries by Harold McGee, Jonathan Bartlett's THE COOK'S DICTIONARY AND
CULINARY REFERENCE and the excellent little FOOD LOVER'S COMPANION, a smart
little dictionary compiled by Sharon Tyler Herbst.

Probably Barry popik could add more.
