Dutch Apple Cake
2 cups flour
1 egg
3 teaspoons baking powder
about 2/3 cup milk
1/2 teaspoon salt
4 sour apples
3 tablespoons butter
2 tablespoons sugar
little cinnamon
Mix and sift the dry ingredients, work in shortening with tips of fingers, or
cut in with knives; add milk with the well beaten egg, gradually mixing with
a knife. Dough must be soft enough to spread in a shallow baking pan. Have
ready, pared, cored and cut in quarters, the apples and when dough has been
spread in pan, press apples into dough in parallel rows. Sprinkle the apples
with ths ugar and cinnamon. Bake in hot oven about 1/2 hour. Serve hot with
a Lemon Sauce.
