And not just mainland China either.  I discovered, while performing
the surgery expertly dictated by Alice Faber, that the data/time
adjustment on my Mac had been set all these years for Taipei.  If I'd
only known, I could have requested that it deliver some good Chinese
food, but now I've reset it for New York time.
