Perhaps this is up Barry's alley.

In the March issue of the Fancy Food & Culinary Products magazine
there's a column on "identifying, resorting (I wonder if they mean
restoring here- R.) and preserving 'endangered' cookbooks" by the
International Association of Culinary Professional (IACP) Foundation,
and quotes Barbara Haber of Harvard Univ.'s Schlesinger Library.

It notes that the first books slated for restoration are from a
collection at UC San Diego, "and include _American Cookery_ written
by Amelia Simmons, the first authentic American cookbood writer, and
Barolomeo Scappi's _Opera dell'Arte del Cucinara_, a famous 16th
-century Italian cookbook noted for its beautiful engravings."
