Pg. 321:
   First of all, a cup of coffee (an article now somewhat scarce in the Caucasus) is prepared, as an accompaniment to the pipe, while the supper is cooking, which generally consists of hot barley-cakes, the savoury _tschicklikha_, composed of minced mutton, rice, &c.--a dish similar to the pilaff; there are succeeded by honey and dried fruits, by way of dessert, varied, perhaps, by a few hard-boiled eggs; and, last of all, the refreshing _skhou_, to slake the thirst.
