Surprising how many of these still apply, a century later (while
others are definitely dated, on one side or the other or both).  My
favorite, more for what it implicates about British culinary
practices (fortunately also somewhat dated), is:

>  _American._                                      _English._

>Rare (meat).                                         Underdone.
