After their work shifts, Bielz planned to eat a hot link plus ice
cream for dessert. Dorsey planned to eat a German taco, which is a
flour tortilla stuffed with slices of summer sausage and jalapeno
cheese, then wrapped like a burrito and heated.

My guess is, the "German" part is the summer sausage.

Fredericksburg is in the part of Texas which got a lot of German
immigration, right?
