Some good "wishes" for the "sandwich lady."
There's a Google Groups message from one "Arnold Zwicky" at the bottom of this. There are 199 Google Groups hits.
"Wish sandwich" was used in the movie THE BLUES BROTHERS (1980), unfortunately not on American Film Scripts Online. I couldn't find it earlier than the Blues Brothers, although it seems like a classic line.

(Um, do that again)
Bow bow bow...

Have you ever heard of a wish sandwich? A wish sandwich is the kind of a sandwich where you have two slices of bread and you, hee hee hee, wish you had some meat...

Bow bow bow...

Ummm... the other day I had a ricochet biscuit. A ricochet biscuit is the kind of a biscuit that's supposed to bounce back off the wall into your mouth. If it don't bounce back... you go hungry!

Bow bow bow...

Umm, umm, umm... the other day I had a cool water sandwich and a Sunday-go-to-meetin' bun...

Bow bow bow...

Hee hee hee hee... What da ya want for nothing? ... a rubber biscuit?

Bow bow bow...

When Cabbagetown started getting fixed up the problem became Parkdale's. Because of the high rents, Parkdale landlords received the flood from Cabbagetown. This housing is now completely booked up. Even when he or she gets assistance with a "wish sandwich" (welfare), the problem is finding the three needs: food, shelter and clothing.

That was pretty typical in Passaic. There were plenty of times when we ate sandwiches made with gravy. There was our wish sandwich, too. We'd eat the bread and wish we had a piece of meat in there.

When money was especially tight, lunch meat evolved into a main course. Cheese and mayonnaise slapped between two slices of bread - a "wish sandwich" - was among Vanessa's favorites.

Its gotta have a name? Well, "Balogna Suprise" is out of the question since
there isn't much to be suprised about when all you got is macaroni and
balogna.  And we can't call it a "Wish Casserole" because it DOES have meat;
although, if you used all of your meat for the casserole, you might have to
have a "Wish Sandwich" to eat with it.

Well, then, how about balogna and macaroni casserole? It's at least
description.

Actually, I ate so many Wish Sandwiches when I was a kid, I can't stand mayo.
I do love Miracle Whip tho.

Wish sandwich: 2 pieces of bread covered in a thick layer of mayo. Fold into
a sandwich and wish you had some meat.
