Cola Cake (1967), Ranger Cookies (1968) in SOUTHERN LIVING

SOUTHERN LIVING is pretty good for Southern food. It started in 1966, but the NYPL subscription starts in 1979. I'm still looking for "pig-picking," but got side-tracked with this "Windy City" thing.
July 1967, SOUTHERN LIVING, pg. 58, col. 1:
COLA CAKE
2 cups flour
2 cups sugar
1 1/2 cups chopped marshmallows
1/2 cup shortening
1/2 cup margarine
3 tablespoons cocoa
1 cup cola drink
1/2 cup buttermilk
1 teaspoon soda
2 eggs, beaten
Sift together flour and sugar and stir in marshmallows, set aside. In a saucepan, put the shortening, margarine, cocoa, and cola. Bring to a boil and heat just until shortening and margarine melt. Remove from heat and pour over flour mixture. Stir in buttermilk, soda, and eggs.
Pour into a greased tube pan and bake at 350 degrees F. for 45 minutes, or until cake tests done. Remove from oven and cool in pan. Cake may crumble slightly. Cake may be baked in a 9- x 9- x 2-inch pan or loaf pan, but it will take slightly longer to bake. Cover with Icing.
Note that you do not beat the mixture.
_Icing:_
1/2 cup margarine
3 tablespoons cocoa
6 tablespoons cola drink (Also in icing?--ed.)
1 box powdered sugar
1 cup chopped pecans
Put margarine, cocoa, and cola in saucepan and bring to a boil. When margarine has melted, remove from heat and add sugar and pecans. Spread on cake. (If frosting is too stiff, add a few drops of hot water.)

RANGER COOKIES
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 cups cornflakes
2 cups oatmeal
2 cups flour
2 teaspoons soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup coconut
1 teaspoon vanilla extract
Cream shortening and sugars. Add eggs and beat until smooth. Add cornflakes and oatmeal and dry ingredients sifted togather. Stir in coconut and vanilla. Drop by spoonfuls onto greased cookie sheet and bake at 350 degrees F. about 10 to 12 minutes. Yield: about 7 dozen.
