Note: This spicy "mop"--a basting sauce that is literally swabbed onto the
meat with a mop or brush--is designed for long cooking with large cuts of pork
such as the shoulder. It gives the finished product a lovely color. Reserve
a portion for dipping at the table.

oyster" and "swinging beef." Neither DARE nor the RHHDAS have "cowboy
caviar" or "Montana tendergroin." This completely different "cowboy caviar" dish
has jalapenos, eggplant, tomatoes, and black-eyed peas--ed.)
