   The Sanctuary, ("International Vegetarian Cuisine & Live Juice Bar," 25 First Avenue between 1st and 2nd Streets) has "Chick-none Drumsticks" and "Chick-none Curry" and "Chick-none Adobo" and "Chick-none nuggets."
   "Chick-un" sound better to me.  I also like "Not Dogs."  "Un-Turkey" is also on the same menu.

That's because she says the only good juice is juice that's "alive," meaning it contains all the chemical properties of the whole fresh fruit or vegetable. Since some substances start to change soon after a fruit is juiced, it's not possible, except with a lot of effort, to squeeze a lot of juice and then store it. Someone practicing "juicing" as the diet is called, must squeeze the juice and drink it immediately.

And it takes a lot of some fruits or vegetables to make a portion of juice. A 16-ounce glass of carrot juice is made from four pounds of fresh carrots. Mrs. Suhr said her family uses 50 pounds of carrots a week.

With her husband, Tobe, squeezing juices on the stage beside her, Mrs. Suhr demonstrated that the best "live" juices contain not just the usually-eaten part of the fruit or vegetable, but often the rind or skin, stem and seeds as well.

The Northwest's entrepreneurial spirit is a siren call to creative and downright strange business bedfellows.

Combination bait shops and espresso bars are not uncommon. A meat market and a taxidermist share a single site and a single sign in beautiful downtown Kelso.

But, for inventive mixmastering, it's tough to beat the Sit & Spin on Fourth Avenue, the magnificent obsession of 26-year-old Michael Rose.

Set to open late next month - Rose hates to be pinned down - the Sit & Spin will be, among other things, a cafe, urban laundromat, art gallery, "live" juice and espresso bar, extensive Italian sandwich deli with beer and wine, and a performance space.

Money and city permits permitting, the cavern with a 173-person occupancy at the back will eventually feature live music and whatever else appeals to the young man from Bellevue. His girlfriend, Lisa Bonney, is billed as the Sit & Spin's performance director.

People walking the west side of Fourth Avenue between Bell and Blanchard invariably stop under the Sit & Spin's recently installed ringed-planet sculpture (a Michael Rose creation). They peer into the windows of the former William Travers Gallery - the windows not papered with '50s magazine ads featuring Roux Shampoo and Kraft cheese recipes.

And they wonder.

No wonder.

The place looks dizzily improbable.

In one window an authentic-looking proposed land-use notice reads:

"Several Eco-systems are conducting an environmental review of the following project: Construction of a waste and greed management transfer station. Or maybe a center for the documentation of facial movement. Or perhaps a convention hall for the National Conference on Espresso Over-saturation. But more likely a live juice bar, art and performance entity with beer."

The cafe is a feast of '50s collectibles. Rose and Bonney have been buying pearlized-topped and chrome-legged dinette tables, poodle lamps and Eisenhower-era black--and-white TV sets for three and a half years.

The flooring is those fat black-and-pink speckled linoleum squares beloved by Ethel Mertz.

And in the center is the impressive kitchen and deli designed by "executive chef" Stephen Claussen, formerly of the New Jake O'Shaughnessey's. He says "live" juice means drinks and "smoothies" from real fruit. Kiwi Apple Grape Ice, for instance. And Pear Lemon Ginger.

The menu boasts the likes of fresh basil, roasted garlic and red peppers, smoked Gouda, chicken breast with fresh tarragon and more on pistolets, 9-grain breads or Foccacia.

UNFORTUNATELY, as is frequently the case in this field, the debate has been framed as adversarial and philosophical rather than investigative and scientific. Proponents of ''live'' juices accept the hype that anything that is ''natural'' is healthier than anything ''processed.'' Apparently the E. coli organism feels the same way.
