Many Southerners, regardless of race, say "srimp."  "Slitz' for "Schlitz" used to be common. (Dr. Laura) Schlessinger is always "Slessinger."

Shrimpers from the Gulf region seem to pronounce "shrimp" as "srimp".
IIR, even the movie "Forrest Gump" got this right.
