I like the "course ground beef" in this one. Could be main course or
side course, depending on the quantities...

As I've always understood it, having grown up in Corpus Christi TX, 'Chili'
has no beans (especially not kidney beans!!), no tomato products of any
kind, and no ground meat.
My aunt in north Texas uses all three of these no-no's in chili and still
refers to it as Texas Chili--in the family cookbook, no less. But then,
there's a saying in south Texas that anyone born north of San Antonio is a
Yankee. So, maybe the north-Texas aunt can be forgiven this minor
indiscretion. ;-)
