McConnell is part owner of Caffé Vita Coffee Roasting. Later in the
article is a bit about Espresso Vivace Roasteria, which is probably
where they got the word from. Ava Roastaria uses the word as well,
probably from roaster + -ia as Italian does not seem to use this word.
