Mencken claimed this was a WW1 term for a field artilleryman, but that may
have been overly specific:

1907 _The Sun_ (Baltimore) (Jan. 13) 12 [ProQuest]: "Sergeant," I said,
"just in plain terms, what would I have to do as a soldier?" "Mudsplasher or
doughboy?" "And that means?" "Cavalry or infantry....There's not much
difference....With one you walk yourself and the other you make the horse
walk, that's all."
