Sounded good to me, too. I have a favorite local diner I might
suggest it to, as an alternative to the "New York potato pancakes" on
their menu for all-hours breakfast. And they could offer it without
the provolone ... or with non-dairy cheese. (I think the chipotle
mayo can be eaten with meat -- Wikipedia tells me eggs are "pareve",
neither meat nor dairy, an interesting concept for something that
emerges from a chicken.)
