The Oxford Dictionary site says that "beta" is an informal shortening of 
"beta test," which in turn says

A trial of machinery, software, or other products, in the final stages 
of its development, carried out by a party unconnected with its development.

I don't think that quite works for beta reading which can be 
more-or-less found under "beta reader" on Wiktionary 
(https://en.wiktionary.org/wiki/beta_reader):

A person proofreading another person's text before the latter makes it 
available to the general public.
=====
