OED has Mule for the animal(1916)

Raleigh (NC) _Progressive Farmer and Cotton Plant._ 29 Nov. 1906 5/2

"The common jar-head, hard tail mule...."

OED has 1931(I think), 2a=member of the Army.

_Reno(NV) Evening Gazette_ 27 August 1917 5/2

"I can see now why field artillerymen are called 'Jar heads.' "

Both were found using Newspapers.com
