"Zoodle(s)" was just added by Merriam-Webster in their September 2018
online update, along with a number of other food terms:

"Zuke" for "zucchini" was also added, but I'm sure Merriam isn't bowing to
pressure from the Zucchini Council's lobbying efforts.
