For "days ending with y", the earliest I've found the witticism is 1931, 
but there's no reason to suppose it wasn't bandied about in the 18th 
century or earlier.

1931  *Wichitan Messenger* (Wichita, Kansas) 21 May 3/1 (newspapers.com) 
  Advice to Lovelorn from Norman Jacobshagen: “I would say that it is 
unwise to get married on any day ending in the letter 'Y’--Sunday, 
Monday, Tuesday, Wednesday, Thursday, Friday, or Saturday.”

Oysters have enjoyed their reputation (when not in the hands of 
unscrupulous walrusses and carpenters), except in r months, since at 
least as early as 1593.

1593  Lodovico Guicciardini *The description of the Low countreys and of 
the prouinces thereof, gathered into an epitome out of the historie of

A hundred years later, an observation may tie into logic in some measure 
accounting for the longevity and substance of the underlying culinary 
folklore:
