The OED's carliest citation for the Louisiana dish "gumbo" (sense 1.b.) is dated 1805.  Wikipedia has an earlier reference:

1802 John Sibley in Susan Tucker & S. Frederick Starr New Orleans Cuisine (2009) 106  The dish they call gumbo which is made principally of the ochre into a thick kind of soop & eat with rice; it is the food of every body for dinner and supper.
