Out of curiosity, I asked AI what "That's so AI" means. Google's AI 
overview:

"The phrase "that's so AI" (or simply "that's AI") is used by kids, 
teens, and Gen Alpha as slang meaning something is fake, inauthentic, a 
cheap knockoff, or unbelievable. Rather than strictly referring to 
computer-generated media, it has broadened into a general BS-detector 
for anything that feels artificial or untrue."
