OED has the earliest citation from NYT for September 1971. This one is a
few months earlier. It likely had been in use in NYC for close to a decade,
at the point. Possibly earlier in Chicago.

"There are two versions of the now-popular gyro sandwich of pressed lamb
wrapped in Holy Land bread..."
