I'm looking for a good textbook to be used to teach the structure of
Arabic for speakers of English language. The course is not supposed
to teach them how to speak Arabic but to help them understand
various aspects of its structure.

One of the best books I've read on this topic is A.F.L. Beeston's "The
Arabic Language Today". It is one of the best descriptive grammar's
I've read for any language, second only to Chao's Mandarin
grammar.

Unfortunately Beeston's book is probably 30 years out of print. But if
you can find a copy, it may be exactly what you are looking for.
