Hi

I am not properly a teacher, and I do not know if this one is really 
"used", but I found it very complete:

    Speech and Language Processing
    (see http://www.cs.colorado.edu/~martin/slp.html)

I know authors are preparing a second version for soon, and some 
chapters are available for review for free. This can be a good option to 
see if the book is what you are searching.
