I wouldn't recommend a 'free-for-all' structure if at all possible. It can have unintended consequences. For example, if you ever needed to import your data into another program, unstructured data is an awful nuisance. Also, a dictionary is, in part, a presentation of structured generalisations about a language (e.g. part of speech, meaning relations, morphological form) and so presenting that information as unstructured is unlikely to lend clarity to the work.
