Hi,
In addition to Kate's great suggestions, another strategy to consider when
video recording something, but you need good sound, is to have a Zoom audio
recorder (or something similar) that you place nearer to the speakers, e.g.
on the table if possible, in addition to adding a shotgun mic (e.g. Rode)
to your camera so that the camera's sound will be better. You can sync the
sound from the two devices using editing software like DaVinci (it's free).
I've had good experiences w Panasonic camcorders.
I'm always too flustered and disorganized to use headphones to verify the
audio, but real sound engineers do this -- it's a good idea!
Best,
Meghanne
